This is one of my favourite recipes! A special, innovative and quick-to-prepare salad with fresh, summery flavours that combine sweet and savoury in an unusual way 🙂

The avocado is one of my favourite fruits, both for its taste and because it is rich in nutrients and has several health benefits. Some of its main characteristics are:

  • Rich in fibre to help regularise bowel movements and control weight.
  • It contains vitamins (such as vitamins K, C, E and B) and antioxidants that protect cells from damage caused by free radicals.
  • It helps to reduce inflammation in the body.
  • Supports brain health and cognitive function.
  • It helps keep skin healthy and hydrated.

Avocados can be a nutritious and delicious addition to your diet. However, it is advisable to consult a healthcare professional or dietician for advice on your individual diet.

Ingredients that serve 2 people

  • 3 eggs
  • 1 avocado
  • 50 g of mixed salad (with carrots)
  • 2 tbsp extra virgin olive oil
  • salt and pepper to taste
  • balsamic vinegar (to taste)

Directions

Boil the eggs for 8-9 minutes until well cooked.

Cut the eggs in half, separating the white from the yolk.

Dice the egg whites.

Peel and halve the avocado.

Remove the seeds and dice.

Place the mixed salad in a salad bowl.

Using a fork, mash the egg yolks into a puree.

Add salt and pepper to taste.

Pour the cream sauce over the salad.

Stir gently.

Add the white of the hard boiled egg cut into cubes and stir gently.

Add the avocado cubes and stir gently with two forks.

Drizzle with balsamic vinegar if desired and serve.

Tips

You can adapt this recipe to suit your taste. For example, you can add cherry tomatoes, cucumbers or sesame seeds for a special touch.

If you like avocados, this recipe can be a good alternative to a traditional main course. It is particularly suitable for children and vegetarians.
