Welcome to the "Cooking in the Camper" column, today I present a fresh, light and delicious recipe, perfect not only for adventures on the road: Ham Orange Salad.
Why "Ham Orange Salad"?
The name of this recipe is a play on words that highlights the main ingredients: orange and prosciutto crudo. This name reflects the originality and simplicity of our on-the-go cuisine, which combines fresh, wholesome flavors into unique and fun dishes.
This recipe is suitable for the following dietary regimes and protocols:

Ingredients that serve 2 people
- 160g prosciutto crudo
- 1 large fennel (or 2 small)
- 14/16 black olives (7/8 olives per person)
- 2 oranges
- EVO oil to taste
- Whole sea salt (or pink Himalayan salt)
Directions
Wash the fennel and cut into thin slices. If you prefer, you can use a mandoline to get even slices.
Peel the oranges and cut into pieces. Make sure to remove the seeds.
Roll the slices of ham into a flower shape or, if you prefer, cut them into thin strips.
Arrange the ham in a dish as you like, then add the sliced fennel, orange slices and black olives.
Season with EVO oil and salt. Stir gently to distribute the seasoning.
Tips
This salad is perfect as a light one-pot meal on hot summer days. The combination of flavours is a burst of freshness: crisp fennel, juicy orange, savoury olives and prosciutto add a salty, rich note. It is a dish that reflects our journey: simple, wholesome and always surprising.
