Ingredients that serve 2 people

  • 12 fresh and cleaned prawns
  • 4 tablespoons of extra virgin olive oil (EVO)
  • 2 large cloves of garlic (or 3-4 small cloves)
  • 2 tablespoons of chopped fresh parsley
  • Salt to taste
  • Black pepper to taste
  • 1 glass of Prosecco

Directions

  • Preheat the oven to 200°C.
  • Ensure that the prawns are well cleaned (if desired, you can peel them by making a small cut along the back of the prawns to remove the black thread (intestine).
  • Pour 4 tablespoons of extra virgin olive oil (EVO) onto the base of the baking dish.
  • Place the 2 cloves of garlic in the baking dish.
  • Arrange the prawns in the baking dish.
  • Pour the glass of Prosecco over the top of the prawns.
  • Ensure that the wine is evenly distributed in the dish.
  • Add salt and black pepper to taste.
  • Sprinkle with parsley.
  • Place the baking dish in the preheated oven for about 15 minutes or until the prawns are well-cooked.
  • During cooking, check the prawns and turn them halfway through to ensure even cooking.
  • Once the prawns are cooked, remove the baking dish.
  • Transfer the prawns to serving plates or a serving dish.
  • Pour the cooking juice over the top of the prawns.
  • Serve the baked prawns with slices of crusty bread (such as bruschetta with cherry tomatoes) to fully enjoy the delicious flavor of garlic, parsley, and white wine.
